  • 1. Wash and dry your mushrooms. Chop 'em up a bit.
  • 2. Add all ingredients (except the second amount of reserved finely chopped mushrooms) into your high-speed blender. Blend on high until very smooth and well-blended. Blend for an abnormally long time because you want this raw cream of mushroom recipe to be slightly warm when coming out of the blender.
  • 3. Pour liquidy mushroom soup mixture into a bowl(s). Add remaining mushrooms and stir with a spoon. See what we're doing here? We're making a liquidy mixture and then adding some chunks to it to give it some texture and variety. That's the trick to all my raw soups.
  • 4. Eat this raw cream of mushroom soup recipe immediately, while still warm from the blender!

I am posting this raw cream of mushroom soup recipe for my raw friend Gayla. She is dying to making a batch of raw cream of mushroom soup so I wanted to post my simple mushroom soup recipe for her ASAP! I've actually been eating this for lunch all the time lately. As you can tell, I am on a raw vegan soup kick!

It's really quite freaky how much this tastes like Campbell's brand cream of mushroom soup. Also, you can vary the water content of this soup quite a bit to alter the result. I would start with 1/4 cup of water and slowly add a bit more water if necessary to (a) facilitate blending; and (2) to get the consistency that you like your soup.

Another note... Sometimes I like to make a very thick batch of this soup and use it like a mushroomy gravy, as well. Mmm!

In terms of portion sizes, this raw vegan mushroom soup recipe is perfect for one nice big bowl of soup for one person.

I got inspired by this and prepared one with butter squash (I like to eat it alone but this was really yummy) and I also added a little bit of coconut butter and thyme... really good!!!

Pretty good! I did have problems getting my cashews to blend smoothly so thought I will try soaking them overnight next time. I added a bit of flax seed oil at the end to pump up the nutritional value. Nyum yum.

Hi Charmaine! Sometimes it can be tough if your blender isn't cooperating. Soaking overnight is a good solution, also sometimes just stopping the blender, moving things around (especially creating an air pocket down the side) and starting up again helps a lot.

I hope you don't mind, but I added a few things to this recipe. First of all, button mushrooms are almost impossible to find where I live. Instead, I used some shitake and a long Asian mushroom with a little white cap at the end. I also added 2 cloves of garlic, nutritional yeast, parsley, and some fresh squeezed lime juice. I also garnished with seaweed crispies. Delicious!

I didn't think I'd get full, but it didn't take long and I was completely satisfied. A great soup on a rainy, fall day, even in the tropics!

Hi Sharon, I love it when you add additional tweaks to my recipes. I try to keep my recipes really simple so that they are satisfying and work on their own, but then you can add more if inspiration hits.

Garnished with seaweed crispies??? YES!!!!!!! That would be yum. I will need to try that. :)

The recipe was super easy to make but it wasn't what I expected it to be after reading the reviews.. I'm going to try the other raw soups. It maybe, we are still getting used to eating raw

Hi Cookie, could be a variety of factors, and could be that the flavor just doesn't suit you.  Try my red pepper soup instead!

I love this recipe it's delicious. I've always made it with raw almond butter, but after trying it with cashews it tastes even better. And, added bonus, raw almond butter is super expensive in England, whereas I can buy a large bag of raw cashews, which will last weeks, for a relatively reasonable price. I'm going to work my way through your other soups now!

I add a tbsp of tamari and top with nutritional yeast flakes (fortified with B12) for variety. I know the latter isn't raw, but it's still a good food in my book.

B12 is very important. It can cause a dangerous deficiency without it
