  • 1. Throw all ingredients in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let the soup blend in the blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw soup. Blend until very creamy and smooth.
  • 2. Transfer raw creamy carrot soup to a bowl.
  • 3. Garnish with whatever you like! I simply sprinkled my soup with pepper and a tiny carrot garnish. Eat immediately.

This recipe is super simple and requires only a blender to make.

It's also very quick to pull together if you have carrots in the fridge, as well as some cashews in the cupboard. And really, who doesn't have carrots lying somewhere in the fridge? They last for a long time and are quite inexpensive. And you should always keep some spare cashews around!

It usually takes about 2-3 carrots to make 1 cup of chopped carrots.

This raw carrot soup recipe makes a nice big bowl for one person. :)

Loved this super easy and quick lunch recipe! I added some chia seeds to bump up the nutrition and some ginger and it was delicious. I have a vitamix- so the soup gets warm just from the blades.

All these soup ideas have gotten me thinking about many other vegetables as well, to do the same thing to. I did a carrot soup yesterday but without your recipe handy, just based on what you did for the other soup recipes. Worked out great! I also added just a bit of fresh ginger and a clove of garlic. Made for a very nice taste. I'm sure this would work out perfectly with pumpkin! I used to make a hot pumpkin soup with ginger in it. Such soups are common in Europe but it was strange to my American friends, although they liked it.

Thanks for such great recipes! I love perusing your site, it always gives me ideas!

I loved this recipe but truth be told I'd rather eat this and most other soups, hot or at least warm so I did heat this up and it was delicious. There's no harm in eating this heated, right?

I love this idea. I like to add a couple teaspoons of nutritional yeast to give it a cheesy flavor along with garnishing with crushed nuts and chia seeds.

I just made this in my Nutribullet. I added a garlic clove, a splash of almond milk and a few shakes of curry powder. It is soooo good. Really eats like a soup! Thanks!

I'm sad to say that I couldn't eat this. I've been trying out tons of raw recipes since i went vegan, (and I've loved everything else) and I was so pumped to try the soups! Soups are one of my FAVORITE non raw things, and I just didn't vibe with this at all. I didn't like the texture and it was just sooo cold! Feeling really bummed, but I'll keep trying and trying to devise my own recipes! I really want to make a move into fully raw, I just need to have a tool box full of recipes first that way I don't end up starving myself!

I start with boiling water , then I added a 1/4 cup chopped onion, a half tablespoon of grated ginger, then the carrots, raw cashews (make sure they are raw, not toasted)' and the salt and a tiny pinch of cayenne pepper and curry powder to taste. Blend on super high speed. When done, the soup should be steaming.

I did an additional 2/3-3/4 cup lite coconut milk, a touch of curry powder, black pepper, and a small clove of garlic. I wanted to add a bit of ginger but mine was freezer-burned :-/

I left it so long in the blender my soup was actually hot! LOL
