Raw creamy carrot soup recipe
This raw creamy carrot soup uses cashews as the cream base. It tastes surprisingly like traditional soup - but without the dairy. A blender is required.

- 1 cup chopped carrots
- 1/3 cup cashews
- 1/3 cup water
- 1/2 teaspoon sea salt
Recipe Directions
- 1. Throw all ingredients in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let the soup blend in the blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw soup. Blend until very creamy and smooth.
- 2. Transfer raw creamy carrot soup to a bowl.
- 3. Garnish with whatever you like! I simply sprinkled my soup with pepper and a tiny carrot garnish. Eat immediately.

This recipe is super simple and requires only a blender to make.
It's also very quick to pull together if you have carrots in the fridge, as well as some cashews in the cupboard. And really, who doesn't have carrots lying somewhere in the fridge? They last for a long time and are quite inexpensive. And you should always keep some spare cashews around!
It usually takes about 2-3 carrots to make 1 cup of chopped carrots.
This raw carrot soup recipe makes a nice big bowl for one person. :)

I think I've put too many cashew nuts as it turned out a bit too sweet, more of a carrot cake taste rather than soup. Solved it on the spot with black pepper and pickles, although next time will keep a closer eye on how many nuts I put.

Raw creamy carrot soup recipe
This is my second recipe from the Rawaterian. I decided to go all raw for a month after coming off a juice detox and though it would be a good time considering i had already been drinking raw juice!
This recipe was very yummy but I think I added too much cashew so it was a little too sweet. I topped with pepper, chia seeds, hemp seeds, and carrots. Yummy! Any suggestions for making it less sweet?

Hi Ashley - coming off a juice fast with raw food is ideal. I hope your month is going well so far. I have a really hard time with juice fasts - I need to chew things -- and eat sweets!!! LOL
Yes, depending on the sweetness of your carrots it can border on sweet. Perhaps counteracting it with a bit of lemon juice?

Raw creamy carrot soup recipe
My husband I had this for dinner. We were skeptical, him especially, but it really was good! It was almost too creamy for me. I added a bit of grated ginger and some fresh chilies. My husband liked it so much he's trying tomato tomorrow. I think that we have a Vitamix and could blend until warm really make the key difference. Definitely a keeper!

Can any of the raw soups be frozen? Or made to use later on the week as lunches for work?

Hi Mellissa,
I don't recommend freezing them, although it can certainly be done.
They are so quick to make (similar to a smoothie), so I really suggest just making it fresh. Defrosting and reheating will probably take more brain-power than simply making another batch. :) For lunches to take to work, I do understand the need to make larger batches and store them though--so in this case freezing (or refrigerating) will do. :)

Hi Emilia,
You could add the meat of 1 avocado instead of the cashews. (The avocado will add fat and creaminess, which is what the cashews do in this recipe.)

Loved this super easy and quick lunch recipe! I added some chia seeds to bump up the nutrition and some ginger and it was delicious. I have a vitamix- so the soup gets warm just from the blades.

All these soup ideas have gotten me thinking about many other vegetables as well, to do the same thing to. I did a carrot soup yesterday but without your recipe handy, just based on what you did for the other soup recipes. Worked out great! I also added just a bit of fresh ginger and a clove of garlic. Made for a very nice taste. I'm sure this would work out perfectly with pumpkin! I used to make a hot pumpkin soup with ginger in it. Such soups are common in Europe but it was strange to my American friends, although they liked it.
Thanks for such great recipes! I love perusing your site, it always gives me ideas!

I loved this recipe but truth be told I'd rather eat this and most other soups, hot or at least warm so I did heat this up and it was delicious. There's no harm in eating this heated, right?
