This simple raw vegan curry sauce tastes like traditional yellow curry sauce that you'll find at your favorite Indian restaurant. This recipe isn't hotly spiced at all, but it does have that nice warm yellow curry flavor.

How did I do it? Easy! Curry is simple: it's creamy, sweet and curried :)

This recipe keeps very well in a tightly-sealed container in the fridge for up to 3 days. It also doubles as a lovely vegetable dip, particularly tasty with broccoli and cherry tomatoes.

I made this and poured it over shredded sweet potatoes (which I had soaked in boiling water for 45 seconds). I added 1/2c of nutritional yeast to thicken the sauce,because mine was a little thin. This is great with zoodles or could be a great salad dressing. I was tempted to lick the bowl it was so good. Thanks!

Hi Laszo! Yes, they are zoodles. (AKA zucchini sliced into noodles using a spiralizer!)

I LOVE LOVE LOVE this recipe!! I have really missed curry. I add the spice into cauliflower rice, but that just doesn't cut it. THIS IS THE BOMB! Question...do you think sunflower seeds would be a decent sub for cashews in those days I'm trying to do less nuts?

Hey Natascha! So glad you enjoyed this one :) I like it too - I love me a good curry haha :)

I would start with 1/2 cashews and 1/2 sunflower seeds - I think that will work okay. Then if that's still good, next time you could do 3/4 sunflower seeds and 1/4 cashews, but that's riskier :)
