Recipe Directions

  • 1. Place everything (except celery and red pepper) into a high-speed blender. Blend very well until it resembles a smooth, creamy Hollondaise sauce.
  • 2. Pour yellow “egg salad” liquid mixture into a large bowl. Add finely chopped celery and red pepper.
  • 3. Stir everything together with a spoon until celery and red pepper are nicely coated.
  • 4. Enjoy immediately or store for up to 4 days in the fridge.

This cashew-based mock egg salad recipe tastes surprisingly like the real thing.  It’s very rich and satisfying, and tastes best when balanced with light, fresh veggies, especially romaine lettuce. 

If your blender isn’t powerful and has a difficult time blending harder items, consider soaking the cashews in warm water for an hour to soften them. Rinse and pat dry before using.

Another idea is to add some chopped mushroom to the red bell pepper and celery. The chewy texture of the mushrooms resembles the texture of egg whites.

Oh my goodness! This was on the meal plan for the 7-day cleanse and to be honest I was dreading it because I HATE egg salad. However, I made myself a promise that during this transition to a healthier lifestyle I would try anything once and I am so glad that I did! I am in love with this recipe!!! I did add a couple of extra pinches of unrefined salt, some fresh ground black pepper, a few shakes of cayenne and a few shakes of dry ground mustard - just enough to give it a little extra kick of flavor, but not enough to make it hot as I am not a fan of hot/very spicy foods. This recipe should be called the "better than egg salad recipe." ;-)

Delicious! I added dill. Thought about adding mushrooms and probably will next time after reading some of the comments. :-)

I also added some chopped mushrooms and 1/2 tsp black salt. Wow! The hubs said are you sure there is no eggs in that? The salt really adds an eggy flavor.

I made this recipe yesterday and it is really soooo delicious <3 I added in some pieces of mushroom as I read here, that gave it the same mouthfeel as real eggsalad! I 'm very glad to have found this, it's surely going to make my raw journey less of a struggle :-) Thank you Laura-Jane :-)

YUM!!! This is so delicious. I added some chopped white button mushrooms as recommended by some members. I did not add the mushrooms to the whole mixture just what I was eating for one meal. Can you add the mushrooms to the entire mixture and refrigerate it or do the mushrooms get funky?

I think you'd be good to do the mushrooms in with the mixture, as long you keep it refrigerated and eat within a reasonable amount of time.

in other raw recipes I've always read that nuts needed to be soaked for several hours if not overnight before making recipes like this, but I followed your recipe and it came out perfectly! you've saved me so much time and now I know that I don't NEEEED to soak nuts, and my recipes arent totally ruined if I forgot to soak my nuts! you are a sparkley magical unicorn! thank you so much

Another winner! This "egg-salad" is just THE BEST!!! I followed the recipe exactly as written, and just loved it! But then...we had marinated mushrooms in the fridge...we topped off the salad with these, and the wow factor went up a level more than we even thought it could. The "egg-salad" is fun to serve in smaller leaves of Romaine lettuce, making little salad "boats." Thank-you, Laura-Jane!
