Recipe Directions

  • 1. Place everything (except celery and red pepper) into a high-speed blender. Blend very well until it resembles a smooth, creamy Hollondaise sauce.
  • 2. Pour yellow “egg salad” liquid mixture into a large bowl. Add finely chopped celery and red pepper.
  • 3. Stir everything together with a spoon until celery and red pepper are nicely coated.
  • 4. Enjoy immediately or store for up to 4 days in the fridge.

This cashew-based mock egg salad recipe tastes surprisingly like the real thing.  It’s very rich and satisfying, and tastes best when balanced with light, fresh veggies, especially romaine lettuce. 

If your blender isn’t powerful and has a difficult time blending harder items, consider soaking the cashews in warm water for an hour to soften them. Rinse and pat dry before using.

Another idea is to add some chopped mushroom to the red bell pepper and celery. The chewy texture of the mushrooms resembles the texture of egg whites.

Wow. People have been raving about this recipe for years. I made this recipe today. I had high hopes and it lived up to them. Even my non raw children and non raw husband enjoyed this dish. I can't wait to try more of your creations.

I am allergic to lemon, lime and all other citrus. Just wondering if there is a non-citrus alternative to the lemon juice you could suggest? Thanks!

Can you give me some idea where Celtic sea salt can be bought? I have not seen this b4, if I can't find it, can I sub by using rock salt or table salt?

Hi Emmeline, I usually buy celtic sea salt at my health food store. In a pinch, you can use regular sea salt instead. Stay away from table salt.

Hello,

I have been browsing your site because it popped up on google when I searched "quick and simple raw recipes." I saw your "egg" salad, and it immediately struck my fancy! Before I went vegan, I LOVED egg salad, so I'm very excited to try this =). My husband has cut meat and animal byproducts significantly -- mostly to help support my changeover -- but is not completely vegan yet, so I'm adding some boiled eggs to his. I'm also going to replace some of my cashews with sunflower seeds because I love their flavor! I can't wait!
