Raw egg salad recipe
This cashew-based mock egg salad recipe tastes surprisingly like the real thing. This is quite a rich recipe, so you'll want to ensure that you're serving it with lots of nice fresh veggies, especially romaine lettuce. Yum!

Ingredients
- 1 1/2 cups cashews
- 3/4 cup water
- 1 tablespoon lemon juice
- 3/4 teaspoon turmeric
- 1 1/2 cloves garlic
- 3/4 teaspoon sea salt
- 3 celery stalks - finely chopped (reserve!)
- 3/4 cup red bell pepper - finely chopped (reserve!)
Recipe Directions
- 1. Place everything (except celery and red pepper) into a high-speed blender. Blend very well until it resembles a smooth, creamy Hollondaise sauce.
- 2. Pour yellow “egg salad” liquid mixture into a large bowl. Add finely chopped celery and red pepper.
- 3. Stir everything together with a spoon until celery and red pepper are nicely coated.
- 4. Enjoy immediately or store for up to 4 days in the fridge.

This cashew-based mock egg salad recipe tastes surprisingly like the real thing. It’s very rich and satisfying, and tastes best when balanced with light, fresh veggies, especially romaine lettuce.
If your blender isn’t powerful and has a difficult time blending harder items, consider soaking the cashews in warm water for an hour to soften them. Rinse and pat dry before using.
Another idea is to add some chopped mushroom to the red bell pepper and celery. The chewy texture of the mushrooms resembles the texture of egg whites.

Try the melt in your mouth breakfast sandwich recipe I found @ nomeatmarch.com - highly recommend more by silken firm tofu...the spice mixture &this tofu make it feel & taste like an egg...especially if you've been without for a while :0)

Love this recipe and made it several times now, then the other day I had some advacado to use up and when I mixed it in an the egg salad I found it almost replicated the texture and taste of the hard boiled egg yoke so combined with the mushrooms I found it was even more like egg salad!!

OMG, this is literally the best raw food dressing I've ever found! I had my doubts to be honest but this is spectacular. To anyone who wants to try, I also suggest throwing in some cherry or grape tomatoes. I find the light acidity of the tomatoes balances the savory richness of the sauce. Thank you Rawtarian!

Just made this for lunch and I can't wait to make it again (probably tomorrow). I'm thinking this will also make really good wrap filling along with some rocket & spinach yumm yumm!

Egg slicer works great with the white button mushrooms. I cut them 2 directions in the slicer. :)

Raw egg salad recipe
I really like the base mixture! After making it a few times, I prefer much less celery and peppers. Definitely loved the the added 2 med-lg white button mushrooms, 1/8 tsp dill, and a pinch of mustard powder (3 serving).
I used the egg slicer for the mushroom to get the same size pieces I am used to with hard boiled eggs.
I want to try it spread on one of your crackers or bread. Which would you recommend as a complimentary taste combination?
