  • 1. Throw all ingredients (except last 1/2 cup of red peppers) in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let this raw red bell pepper soup recipe blend in the Vitamix or Blendtec blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw red bell pepper soup recipe.
  • 2. Transfer raw red pepper soup to a bowl. Add the remaining 1/2 cup of diced red peppers and mix gently with a spoon.

Big thanks to Julie K and her comment on my raw tomato soup recipe for inspiring me to modify one of my existing raw soup recipes to come up with this super creamy raw red bell pepper soup! This recipe is super simple and requires only a blender to make.

It's also very quick to pull together if you have two red peppers in the fridge, as well as some cashews in the cupboard.

By the way, red bell peppers are sweet. So do not use green bell peppers for this recipe since they aren't sweet enough!

This raw red pepper soup recipe makes a nice big bowl for one person. :)

It takes approx. 1 medium red bell pepper to make 1 cup roughly chopped red bell peppers.

Glad your bf liked! I've been playing with adding coconut milk to some of my soups lately (instead of cashews) - that would probably work here too for a little twist!

If you haven't made many other raw soups yet, the tomato, celery and cream of mushroom soups are good too.

Another winner!! I loved this! I changed it up just a bit. I used almonds, as I didn't have cashews. I also added two garlic cloves, onion powder, cayenne, and a jalapeño. I too love my warm soups, so I used hot water as someone mentioned. Excellent!! Thank you!!!

I tried this soup tonight and really enjoyed it! I only used 1/4 cup of water, but next time I'd use less, as I would have preferred the soup a bit thicker. I added tomato in addition to the bell pepper as mix ins, since I had one that needed to be used up and thought it went great with the pepper! I also added a pinch of basil, like I saw suggested in one of the comments and thought that added a good flavor. I'll definitely be making this one again! Although I do think I prefer the tomato soup recipe to this one (what can I say? I love tomatoes!).

Made 3 serves of this for a spring lunch today. Husband and guest both liked it. My husband says it reminds him of a summer gazpacho. Because it warmed a bit in the vitamix, I definitely found it very tasty!!!

Thanks so much for this recipe! Question: i want to use this soup for lunch, but i saw that for shelf life you put: eat immediately. Is there any way i can keep it long enough for lunch?

Hi Erika! You can keep in fridge for up to two days, but I like eating immediately because I don’t really like cold soup straight out of the fridge :) You can always blend it up again to warm it up, or just place in pot on stove to take chill off (to get it to room temp) – if you can put you pinkie in it then it is still raw temperature :)

If I don't have a Vitamix, could I use a food processor? Do you think that I should soak the cashews for a few hours to make blending them easier?

Hi Kara,

Ideally this should be made in a blender, but I think what you suggested is a reasonable solution. It would get quite as smooth though.

Make sure that your cashews aren't too wet - then the soup will be too runny. So do pat them dry before using
