This walnut-based raw taco filling is an excellent, hearty vegan topping for tacos or a taco salad. It keeps in the fridge extremely well for up to 4 days. A food processor is required.

This recipe is an excellent, hearty base. It’s a perfect addition to a whole foods vegan meal because it adds a heartiness and depth that’s hard to get without faux meat soy products.

This recipe calls for sun-dried tomatoes that have been soaked in oil. Usually, you will purchase them pre-soaked.

If you don’t have walnuts, pecans will work equally well in this recipe.

As you can tell by the ingredients, the size of this recipe is quite small. Double up as necessary.

This raw taco meat recipe has been an excellent, hearty base and my husband loves it--more than I do, even. I often spread this recipe on romaine lettuce, and I top it with tomatoes and fresh sprouts. Sprouted adzuki beans go surprisingly well with this recipe. It's a perfect addition to a raw meal because it adds a heartiness and depth that's hard to get on a raw food diet. I have been a vegetarian since 2001. Once I went vegetarian I immediately replaced meat with soy products. One of the most difficult parts of my transition to the raw lifestyle has been to give up the soy and tofu products that were staples in my husband's and my diet. I seem to like small recipes because I am thrifty and I want to try a small batch before I invest 2 cups of this or that into a recipe that doesn't turn out well.

This was amazing! I didn't add any oil to keep it light, and it still was so good. I stuffed it inside a red bell pepper for lunch and it was fantastic :)

Serious perfection. I didn't bother to measure the spices because it's my opinion that a girl cannot have too much spice. :] First time I made it, I used the oil-packed sun dried tomatoes, and it turned out very rich and divine. By the third time, I started adding a whole jalapeno and the regular sun dried tomatoes. Still divine. Soooooooooo much better than TVP, it is really quite incredible. Thank you again for a fantastic recipe!

I didn't follow the recipe EXACTLY but it eventually came out so good I had to make myself stop eating it. :-) Had it wrapped in lettuce leaves.

This is the second raw recipe I've tried, after trying some raw fettucini alfredo and zucchini noodles. I've been desperately looking for good recipes that didn't have a thousand obscure, expensive ingredients and which would thrill my picky palate. I love this one! Thank you so much!

Is there a way to make "taco meat" without the nuts? They're expensive and I hear they're fatty.

The nuts are integral for the texture of this recipe. And if you pair a smaller amount of taco meat with a larger amount of lettuce, tomato, etc then I think you will be fine :)

Hands-down, THHHEEEE BEST taco recipe. My 12 year old daughter (who is not raw, nor vegetarian) gave this her seal of approval!! Blows away other recipes with namo shoyu. I did add some cumin. GREAT WORK!!!

Tried this tonight for dinner with raw sour cream. We dehydrated it lightly before serving it with corn tortilla, green leaf lettuce leaves, and some vegan cheddar cheese. I hope to find a raw tortilla recipe soon though it did bring it all together taste wise. Very good recipe! I added fresh garlic to mine. Thanks for posting!

Absolutely delicious! I made the first batch, tasted it and immediately began gathering the ingredients for a second batch! I added garlic and chipotle pepper to mine. My husband raved about it today :)

um, found this on pinterest and am doing a raw cleanse. am SO glad i found it, it's SUPER tasty. mine looks more red than brown but it had a really great flavor. glad to have found your site.

i made these tacos and added rehydrated red poblanos from my garden... topped with cashew sour cream, sprouts and fresh salsa soooo good!! my teenager and boyfriend loved them. thanks!!!

This recipe looks yum, I really want to try it! What do you mean by soaked sundried tomatoes? When I buy them, they are always in a jar of olive oil or so. Will this do or do I need to take them out and wash them?

Yes, that'll be okay to use. Just drain off the oil so they are not too wet and sloppy, but haven't them pre oiled like that is probably fine. You don't need to soak in this case because they are already soft and moist.

I usually by my sun-dried tomatoes totally dry (not soaked in any liquids) so that's why I suggested soaking.

Oh WOW! I have dabbled with raw food for the past year, but really going for it now. Admittedly I am "weaning" myself onto it as my recipe repertoire improves! I won't be able to get a dehydrator for a while either ...

I just made this (had to mess with the quantities for just little old me!) and had it in corn tortillas (no dehydrator! But better than floury tortillas surely?!) with diced cherry tomatoes, cucumber and onion. It was absolutely delicious! I just went shopping and got some mushrooms ... going to try the soup tomorrow!

I am so thankful for this website! I was worried I would have to live off Raw Pasta forever, with the help of my trusty spiralizer, but I'm speedily learning new dishes so I have no excuse not to get my act together! Thanks Laura-Jayne!
