Recipe Directions

  • 1. Add all ingredients into large bowl except the shredded coconut.
  • 2. Stir with spoon until well mixed.
  • 3. Once combined, add shredded coconut. Stir again until well combined.
  • 4. Drop cookies onto a cookie sheet. Cover and freeze for at least 30 minutes. (Cookies will harden when cooled.)
  • 5. Store leftover raw vanilla drop cookies in freezer.

Best served cold, straight-out of the freezer because coconut oil will liquify again once warm.

This recipe makes approximately 15 drop cookies. These are super sweet and rich, so just one after dinner does a lot to satisfy that sugar fix!

Please note: the tahini is definitely the secret ingredient in this recipe. So do not try to substitute it with anything. (And do NOT use sesame seeds instead of real oily/liquidy tahini! The texture will be all screwy and not good if you do that. For realz!)

Oh my goodness!!!! Tasting the first step (the ingredients without the coconut) was amazing!!! I don't like tahini but mixed with everything else wow! I think I will use that sauce as a butterscotch type sauce on cakes/muffins etc or maybe freeze it as butterscotch lollies. I am new to dehydrating, do you think you could dehydrate the sauce and have as rollups? Wow again! Now I am patiently waiting until they set.

I don't like tahini on its own either, but it's kind of like butter - not something that you just eat alone, but in the right combo it is GOOD haha.

nice ideas re: sauce and candies!

re: dehydrating - if you try it, do it without the coconut oil and do not use honey (since neither of those ingredients dehydrate well)

Yes there is raw tahini but a little harder to find. I've used the roasted tahini & tastes great!

Is Tahini raw? All the tahini I've seen has roasted sesame seeds. Is there tahini with unroasted sesame seed? Thank you

Good question Merrick. As Rebecca kindly mentioned, it's definitely available if you look.

Also, you can make it yourself by grinding sesame seeds in a clean coffee grinder and then adding water and making it into a paste

My are these divine! Like, really, amazing. The only mistake I made was using whole sesame tahini instead of regular white which I think accounted for some slight bitterness but that isn't really a deterrent. Five ingredients never made something so good! (I left out the salt)

I made some balls. For my second batch, I replaced half of the mapple syrup with raw coconut sugar for a little crispy effect and I substituted the shredded coconut with hemp seeds and last but not least, I added some matcha tea! So quick so fast, I'll always have some in my freezer now! I brought some to my friend's house and she loved them too!
