Raw Breakfasts

Raw porridge recipe

1/3 cup chia seeds (ground AKA milled)

2/3 cup water

1 tablespoon raisins

1 tablespoon dried shredded coconut

1 teaspoon honey

Optional: pumpkin seeds, almonds, sunflower seeds, etc.

Directions

1. Put chia seeds in bowl. Add water. Stir thoroughly RIGHT AWAY otherwise it'll clump up.

2. Add honey and coconut and mix more with your spoon. Chia seeds will absorb a lot of water really fast and thicken up.

3. Add anything else you want, like 1/2 tablespoon pumpkin seeds, a few almonds, 1/2 tablespoon sunflower seeds etc. Just for taste and to give it some excitement.

4. By now your raw chia porridge should be pretty thick.

5. For extra pleasure, top your raw porridge with cashew milk and fresh or thawed blueberries.

Raw porridge is a perfect way to start your morning! It's great because it's super quick - think 4 minutes or less.

Most mornings I'll start my day with a silky green smoothie. However, if I'm in the mood for a litte more excitement I'll perhaps have raw cereal, raw oatmeal or raw porridge :)

Strawberry banana bowl

1 large banana or 2 small bananas (use firm bananas, not soft mushy ones)

1 cup sliced strawberries

Cashew milk (or almond milk -- any type of home-made nut milk will do)

Directions

1. Slice bananas and place in bowl.
2. Slice strawberries and place in bowl.
3. Add plenty of cashew milk, breakfast cereal style! I also like to add a bit of cinnamon sometimes too.

Enjoy immediately with a spoon! This doesn't keep well so slurp up!

Over the past couple of weeks I have been slurping up many delicious bowls of sliced strawberries, sliced bananas and a generous splash of cashew milk on top.

I know it sounds boring, but the sweet flavors take me right back to my happy childhood, where a sweet snack in our house was a bowl of sliced bananas with milk on top.

Raw breakfast cereal recipe

1 chopped apple (Gala is my favorite)

1 tablespoon raisins

1/8 cup almonds

1 tablespoon sunflower seeds

1 tablespoon buckwheat groats

1 dash cinnamon

Cashew milk poured on top

Directions

Simply assemble in a cereal bowl. You don't have to be exact with your measurements, but you should try to include the chopped apple and the buckwheat groats.  Pour cashew milk on top and consume immediately.

This serves one. Sometimes I'll have two bowls (two servings) if I'm hungry :)

I am having this for raw breakfast cereal recipe on the weekends these days. I tend to have green smoothies on weekdays when I am in a rush, and raw breakfast cereal on the weekends when I have more time for a treat.

Raw crepe recipe

8 ripe bananas (perfectly ripe please -- lightly speckled with brown spots is perfect)

1/2 cup water

Directions

1. Add all 8 bananas to your highs-speed blender. Pour in 1/2 cup water.

2. Blend on high until very nicely mixed. It will look like a nice, thick smoothie.

3. Most likely your dehydrator tray has little holes in it, thus you'll need to either use teflex sheets or parchment paper to line your dehydrator trays. (Do not ever use "wax paper" because the food will stick to it and it'll be a huge disaster.) Pour 1/4 of the recipe on 1 of 4 lined dehydrator trays. The batter should be spread out quite thinly, and be sure to spread out the "batter" thoroughly so that each tray is one big crepe. It's easy, don't worry.

4. Dehydrate your raw crepes until they are a lot less liquidy and totally pliable. Dehydration time for this raw crepe recipe varies depending on a gajillion factors, like humidity and temperature. However, to give you some indication, today I dehydrated my raw crepes for 1 hour at 125 degrees, then I lowered to 105 for another 8 hours or so.

5. Watch them closely, because you'll want them to be pliable so that you can roll them up! Do not overdry. If you overdry they'll still taste good, but you won't be able to roll them and they'll be kind of crispy and brittle. In order to test them, just try peeling them off the parchment paper or teflex sheet.

6. Serve with whatever you like to top your crepes with, for example, you can place a line of fruit dip and top with fresh raspberries, then roll up crepe-style and eat with a knife and fork. Perfect for a gourmet raw breakfast! Pretty sweet though so brace yourself for a sugary breaky!

This recipe should fill 4 regular dehydryator trays. Thus, it will make 8 crepes. (Just make 4 big crepes and then cut each crepe in half once it's done.)

Raw crepes are so gosh darn easy. If you can make a smoothie and if you own a dehydrator then you're all set. They do take some time in the dehydrator though, so they're not instant. :)

You know me and my obsession with the simple. So here's the very first raw crepe recipe that I made as a raw vegan. I love this raw crepe recipe because it's just fruit and water. Easy! Basically, all you have to do is make a banana smoothie and throw it into the dehydrator. And it always turns out well, too.

Raw cashew milk recipe

1 cup cashews

3 cups water

2 tablespoons agave nectar (or honey)

2 vanilla seeds (or 1 tablespoon pure vanilla extract)

A tiny tiny tiny tiny splash of almond extract (optional)

1 teaspoon cinnamon

pinch sea salt

Directions

1. Blend the cashews and water in a high-speed blender. I use my VitaMix blender, which is the best blender in the world! Blend very well so that the liquid resembles a thin milk.

2. Add the remaining raw cashew milk recipe ingredients and blend again.

3. Drink this delicious raw cashew milk recipe and experience heavenly bliss! As mentioned above, your raw cashew milk can be drunk straight, or served as a milk substitute in cereals and other recipes.

PS: If you have any left over raw cashew milk from this recipe, try making raw chia seed pudding with your raw cashew milk recipe.

Raw cashew milk recipes do not come close to this sweet, almondy cinnamony raw cashew milk recipe.

Raw cashew milk can be used for many many purposes in your raw food lifestyle.

I tend to drink this cashew milk as a delicious sweet treat, perhaps as a dessert, or I serve it over home-made dry cereal or I even splash a 1/4 cup on top of a bowl of my raw oatmeal.

Raw almond butter recipe

2 cups almonds

2 tablespoons of honey

1/2 teaspoon of sea salt

Directions

1. Place the almonds only (do not add the honey or salt) into your food processer.

2. Food process your almonds. Keep scraping the sides. At first, the almonds will just be all powdery and you'll think you need to add liquids. But do NOT add any liquids. Just keep processing them and scraping the sides. Seriously, keep processing and scraping the sides for approximately ten minutes. (Yes, that's right, 10 minutes!!)

You'll see that your almonds will eventually turn kind of doughy. Keep processing them... They'll turn buttery if you process long enough.

After approximately ten minutes of food processing (could be a bit longer or a bit less depending on the strength of your food processor), your raw almond butter recipe is basically ready. Please wear ear protection, by the way! This is a long and loud process.

3. Once you've got the consistency you like, add the honey and salt and mix by hand.

Enjoy your raw almond butter recipe!

Raw almond butter recipes are something of a myth in the raw food world. Why won't they blend well? What's the deal with all these bad raw almond butter recipes?

But I've got a raw almond butter recipe that does the trick.

Make this raw almond butter recipe in your food processor, not your blender, not your VitaMix and not your BlendTec. (Trust me.)

Raw oatmeal recipe

1 1/4 cup steel cut oats (or better yet, use oat groats)

1 1/2 cups water

1 chopped apple

1 tablespoon raisins

Directions

1. The night before, throw the water, raisins and then the steel cut oats into your blender. Let them sit overnight.

2. In the morning, start your blender. While the water and oats are blending, chop the apple and then add it to the blender, too.

3. Continue blending until the oatmeal is a nice, smooth texture.

4. Eat! I love to top this oatmeal with more whole raisins and a sprinkle of cinnamon. This recipe for raw oatmeal makes for a very filling breakfast.

PS: It has recently come to my attention that the rawness of steel cut oats and even oat groats in this recipe is disputed! Check out this discussion on the raw nature of oats.

In the morning, my raw food breakfast is almost always either fresh fruit, a green smoothie, or--my favourite--raw oatmeal.

This recipe does take a bit of preparation because it has to be soaked overnight, but, with only a few ingredients, it's so easy!
