Ingredients
1/2 cup cashews
1 cup water
1/2 large ripe mango
1/4 cup chia seeds
1/4 cup dried, shredded coconut
Recipe Directions
1 Blend the cashews, water and mango together in the blender.
2 Pour into a tub or dish, scrape out blender and lick spatular.
3 Sprinkle over the chia seeds and coconut and mix well with a fork.
4 Mix again after 10 minutes or so then either serve immediately or chill in the fridge.
Fee's Thoughts
By Feei had a ripe mango that needed using and no yoghurt of any sort (soya or almond or cashew) to go with it so I decided a chia pudding would be nice and then decided to blend the mango in rather than chopping it on top.
