Ingredients
1 cup cashews (soaked, dehydrated)
1/2 cup water
1/2 teaspoon salt
1/2 clove of garlic
1/4 cup onion (diced)
1/4 cup red bell pepper or fresh pimentos (diced)
Pinch of thyme
2 teaspoons fresh lemon juice
2 teaspoons nutritional yeast
Recipe Directions
1. Blend everything together for a few minutes until smooth.
2. "Cheese" is great to use as is at this point or you can dehydrate it for a few hours to thicken it up so it can be spreadable.

I have adapted it to be almost fully raw.
This has a great flavor and is a good way to get more nuts in to your diet.
(cheese shown on flax crackers before dehydration)
