Ingredients
3 cups Thai coconut water (1 1/2 - 2 coconuts)
3 cloves garlic (peeled)
¼ cup lemon juice (freshly squeezed)
¼ cup cold-pressed organic extra virgin olive oil
¼ cup tamari or organic raw soya sauce
1 tablespoon curry powder
Recipe Directions
1. In a blender, combine all the ingredients and thoroughly blend.
2. Pour into a serving bowl.
3. Using a ladle, remove and discard any foam that rises to the top.

Optional garnishes for this dish include chopped avocado, chopped chives, chopped tomato, chopped red bell pepper, chopped basil leaves, chopped mint leaves, and chopped cilantro.

Ok... I really like the sound of this.. but let me make sure I have the ingredients right... is it 6 cloves of garlic? Also.. did you mean ginger on the one that says 2 inch piece of peeled garlic? I am sure that one is ginger.. but I want to get the garlic right.

~thank you! i made it earlier today and also blended with coconut meat. it came out very creamy, i added 1/2 cup of gynostemma tea. it also made it warm. it is wonderful to garnish with either herbs or some chopped vegitables, though as is was perfect.

I don't see ginger in the ingredients list - should it be? I have been looking for a raw thai coconut soup recipe for a long time.

This is amazing! I added the coconut meat, galanga and a bunch of the garnishes.

That's Matt Amsden's recipe. It's really good with all the optional garnishes. I added the coconut meat in also.
