Flax Seed Gel Consumption

So I have flax seeds in order to make flax seed gel, and I was wondering if anyone knows if consuming the gel itself has any benefits.

If I was to guess I'd say it contains some of the omega-3 acids and a little fiber but not much. My fear is that most of the nutrients are denatured by the boiling of the seeds. Does anyone know for sure? Because boiling the seeds down to a gel (or like a tea) is easier than trying to grind them up.

Follow up question, If the gel does have any nutritional value, would it be absorbed locally if applied to the skin?
