Last summer I had a wonderful crop of carrots, and we loved to go out and eat the tops. Nobody ever got sick, so I would think they were o.k.
Yeah, they’re ok to eat! Victoria Boutenko mentions them in her Green For Life book. I’ve also had carrot tops and they’re REALLY good! Fibrous, tangy, slightly carroty… very good with a lemon dressing.. YUM!

Some of the sites I found said they’re mildly toxic so I was worried. But they taste so good to me, they’re like parsley. I’m glad you all agree :c)
Carrot greens are edible. They have nutritional value however I do not have nutritional information. If I find information I will post it here.
