Aubergine/egg plant rawvioli wraps, nice or nasty?

Hi everyone, I have seen aubergine, (or egg plant in the USA,) used as a rawvioli (ravioli) wrap or as pasta (noodles) in lasagna in many recipes. But whenever I try and do it it just tastes awful. I have followed instructions about marinading it in lemon juice to take out the bitterness, but it is still so bad it is inedible. And yet I see it time and time again in raw food recipes, what am I doing wrong? Does anyone have the magic answer to making it taste good? It always looks so tasty in the photos…I really want to find a way to use it.

    I have included some sites that I have went to before when reading up on eggplant. I also included other sites I am sure some may have an idea of what you could do to help with the bitter taste. I personally would not eat raw eggplant.

  • It’s not so bad when marinated correctly. There was this recipe for bacon that used eggplant. I tried it and I hate eggplant. It was not that bad. Actually I’d make it again. I’m still alive to tell the story.

    I just read in a recipe book that good eggplant is not bitter. The ripe ones are firm and heavy for their size.

  • All the eggplants I got from the farmers market this summer were delicious so it must have something to do with them being ripe and in season. They make great “pizza”crusts if you slice them in rounds and dehydrate till dry, then top with your favorite pizza toppings.

    You can use thin slices of turnip instead of eggplant for the ravioli, marinate them in your choice of marinade.. very delicious

    HI guys, eggplant is one of my faves the old persian housewife trick to remove bitterness is to lightly salt it and let it sit then rinse the salt off, but as was stated, before a good eggplant is not bitter. I noticed when i grew the stuff myself if it was particularily hot that summer it was more bitter due to lack of enough water but on normal summers with regular water it was almost sweet!!! I have some of julianos recipe for cured eggplant in my fridge now and its devine!
