I read that irish moss is used as thicking agent to make puddings and stuff so maybe you could try that? Ive never used it before though so i dont know

Yes! The lemon cookies are to die for!! Also, you can make a great lemon pudding by squeezing a lemon with pulp, adding avocado, and maple syrup to taste. I like to add raisins to it. Its deliciously creamy lemon goodness!
