In my experience, when I freeze any coconut mixtures, they freeze into blocks of ice. However, if it is an ice cream cake, maybe it wouldn’t get quite like that. You should refrigerate it overnight and then a few hours before you eat it put it in the freezer. Hope this helps!
I have frozen the mango cheesecake which uses coconut, cashews, and mangos… and lecithin for thickening… and I have had good luck. It is not a block of ice, but easy to cut with a butter knife (and strong arms)! It lasts in the freezer 2-3 weeks before it starts to brown.
