Raw Nanaimo Bars?

Has anyone ever come across or made a Raw Nanaimo Bar recipe? If so I’d love to try it!

  • looks like you’d need a brownie base some vanilla icing and a thin layer or chocolate on the top and that’s it. Well atleast from the pic I saw on wiki.

  • Oooh…thanks, Chris, I’ll have to give it a try! I’m alway one to go with the tried and proven recipes, like the ones I’ve tried on this site, so it’s nice when someone who “has the knack” and is more familiar with making recipes can give a helping hand. :) Okay, the brownie base and the layer of chocolate I can handle…It’s the vanilla icing that I’m not sure about. Any suggestions as to what it would take to make that up? I noticed that luv-2B-raw posted a recipe for a carrot cake that uses a vanilla walnut icing, (http://goneraw.com/recipes/2562-Carrot-Cake-wit…) I haven’t tried that one yet, but that could probably work.

    Wow, I can’t believe I’ve never heard of these before – they would have really appealed to me as a cooked foodie! The graham cracker bottom layer reminded me of a recipe I saw recently on We Like It Raw:

    It also has a creamy topping, so maybe if you omitted the raspberry swirl (or kept it in if you like raspberries and chocolate!) and then added a basic chocolate icing on top (cocoa powder plus sweetener plus coconut or cacao butter), that would get you kind of close? It might at least be a good place to start.

    Keep us posted on your progress! I’m not sure how the texture of the vanilla layer is in the original, but if you want it more custard-like, you could always add a bit of young coconut.
