When a recipe calls for 1 & 1/2 cups of soaked almonds or other nut. Is the measurement before or after soaking???

I put one and a half cups of almonds in water to soak last night… When I poured them out, they were so plump that I re-measured them… I now have 2 and 1/2 cups of almonds.. So what do I do? Use them all or just one and a half cups?

  • I would say after. Otherwise one would specify in their recipe instructions to soak 1 1/2 cups almonds and use all of them after being soaked. At least that’s how I would express it.

  • I use to make this same mistake when we started looking into raw food.

Alissa Cohen’s book ”Living on Live Food” has a wonderful nut & seed chart in it. In her sprouting chart she shows…

dry amount – soaking time – sprouting time – yield

But to answer your question. After trial and error, I have learned it is the measurement after soaking that you will want to use.
