I used to love pretzels too. Maybe try a cracker recipe using chia seeds. They have atexture and crunch that is reminicent of pretzels. Or possibly create a savory buckwheat pretzel? Good Luck!

I would think to make your batter very light and not to thick.
Marichiesa – where did you buy those raw chocolate covered pretzels that you were speaking about? Do you remember who made them?
If you want the salty crunch, how about salty flax crackers? Soak flax in water (to which you have added salt and/or seasonings) for 30 min. or more, then spread out on teflex and dehydrate. Turn over onto mesh tray after a few hours (maybe 6?) and dehydrate other side until crunchy. These are hard to ruin consistency-wise, and you can flavor them however you want. I like to use the liquid from fresh salsa and just add some salt and a little water with the flax.
i’m thinking flax seeds and wheat groats ground fine as the base, maybe some yeast to allow it to rise and other regular pretzel ingredients.
