Angela Stokes has a recipe on her site that uses veggie pulp (at least half carrot) to make a banana bread. I bet you could transform that into cookies.
Or maybe a carrot cake-like cookie, with raisins and walnuts and cinnamon?

someone at my last potluck brought in some flax crackers that were made with carrot pulp.
I like the looks of the “take the cake” carrot and raisin bar. I’m going to give that a shot.
Of the raw carrot cake recipes ya’ll have tried which one do you like best? At the raw restaurant here in Santa Fe, I tried their version but it didn’t really “wow” me. It was the first and only raw carrot cake I’ve ever tasted so I have nothing to compare it to…
