Carrot cookie challenge

I’ve got quite a lot of carrot pulp left over and thought I’d see if anyone is interested in stepping up to a Carrot Cookie Challenge? I searched the recipes for a carrot cookie and didn’t get any hits. Any of creative chefs out there want to give this a shot? Thanks upfront!

  • Angela Stokes has a recipe on her site that uses veggie pulp (at least half carrot) to make a banana bread. I bet you could transform that into cookies.

  • someone at my last potluck brought in some flax crackers that were made with carrot pulp.

  • I like the looks of the “take the cake” carrot and raisin bar. I’m going to give that a shot.

    Of the raw carrot cake recipes ya’ll have tried which one do you like best? At the raw restaurant here in Santa Fe, I tried their version but it didn’t really “wow” me. It was the first and only raw carrot cake I’ve ever tasted so I have nothing to compare it to…

    If you check out my goji cacao buns (posting today), they have carrots in them, instead use your pulp.
