Any ideas for eating raw potatoes?

Potatoes are one of those foods I crave constantly. Chips, mashed potatoes, etc. etc. I’ve tried a few of the mock mashed potato recipes and they’re good, but they’re not potatoes! Is there anything I can do with raw potatoes? Any dehydrator recipes perhaps? Thanks!

    hmmm… raw potattoes. Well if you are craving chips, then I guess you could slice the potato into thin slices and dehydrate them for a while.     If you want a substitute for fries, you can chop raw jicama up into matchstick fry shapes and toss them with olive oil, sea salt and other seasonings of your choice. They are really good. Even my nonraw family members will eat them.

    hmmm.. thats why i got a stomach ache. I remember eating raw potatoes wen I was in South Africa because we didnt have any heat. Those were the good ol’ days :) Thanks for the in info shannonmarie!

  • We tried making chips out of sweet potatoes, but it didn’t work so well. Got rather rubbery, they did. I’ve had the jicama fries before, as shannonmarie mentions, and those were quite good, and spicy. I’ll see if I can get the chef to share the recipe!

    Thanks for the info, everyone. I was wondering if dehydrating would heat out the bad stuff in potatoes, but the wikipedia article cited suggests that even boiling isn’t enough – potatoes need to be baked (higher than 170
