I have been researching acrylamide, and have found a few interesting things, including this article:

    yeah, i hadn’t even ever heard the world “acrylide.” thanks. that’s really interesting.

    i think it’s good note that this is just one of the toxic residuals created from cooking our food. i was reminded of leukocytosis the other day. there will probably be more disease-causing entities found in specific foods that have been damaged by heat… they’ll start naming them after their wives and dogs, and we’ll have a whole body of research to prove that heating THIS creates THAT… but why not just stay away from heat damaged food all together, and save themselves the headache?

    to me it’s like researching how long you can keep your hand in a fire before you get irreversible burns why not just keep your hand OUT in the first place. ;)
