How to Cure Olives
Hope this is helpful.
It’s a good start. I would like to know when you pick them, green or black or green for some kinds of olives and black for others. Do you pick them when they are soft or hard? This is a good brining basic, I’d also like to know how to make Greek olives (salt-cured, not brined) and how to make raw Morrocan and Kalamata style olives such as those sold by Sun Foods and other types as well.
