Cutting up foods in advance?

I have a hard time getting up early. I try to drink a green lemonade every day for breakfast (as Natalia Rose describes in her book) and I always prepare it fresh, as she says vitamins get lost so quickley you should not prepare it the night before.

Now does the same thing apply to cutting up fruit? Because I like to take some kind of fresh fruit salad with me to work... do you think I could do this the night before or rather not?

    I tend to wash & cut my strawberries the night before for my morning smoothie because I don't have time in the morning. I also cut up my melon for my lunch the night before (Imagine bringing huge melons to work and cutting them up in the staff room!)

    I never even thought my fruit losing their nutritional value by cutting them in advance. Hum...I guess I have the same question.
