Miso and soy sauce - not raw!!

I thought I'd research how to brew and ferment this stuff, and every single source I found says that the beans are boiled or steamed, and in the case of the sauce, the wheat is roasted!! Bah!!

    Yes I knew this. Though im pretty sure you can get nama shoyu which is a raw soy sauce. Im not sure about miso ive never used it. But i know that a lot of faw foodies include them in their diets even though they arent 100% raw

     

  • Strictly speaking, nama shoyu is living, but not raw, because it's prepared in a similar way except for the pasteurisation. It's got enzymes and the like from the fermentation process. "Nama" means "raw" but it's just a name. This doesn't bother me at all, I still use soy sauce and miso, but others might be a bit more choosy so that's why I posted it.

  • I'd use the stuff if it didn't upset my stomach :(

    http://www.southrivermiso.com is a good source for raw, unpasteurized miso. It's...different.
