I made up this recipe. It tasted really good and satisfied my never-ending chocolate cravings. Then about 5 minutes later, I started to feel good. Really good. Like I was on ecstasy good. This might be a good thing to serve on a date.

Recipe Directions

1. Mix chia seeds and 1/4 cup water and let them sit for about half an hour, or until the desired thickness has been reached. (For those who don’t know, when you let chia seeds sit in water, they form a kind of tapioca-like gel.)

2. Add the cacao powder and the agave (use more or less than I did to taste) and mix it up.

i dont know about the ground chia seeds... Whole organic chia seeds are very available online. nutsonline has them, as does natualzing.com as well as getchia.com. All are reasonably priced. By the way..I'm on my second batch of this pudding and developing new flavors today...Banana mango pudding is in the process of being perfected ...mmmmm

I just finished chowing down on this and it is AWESOME.. I love puddings and especially tapioca. I just purchased some chia seeds and made my first batch of gel yesterday..This is definitely going to be a regular. I substitued raw cocoa powder for raw cacao, and added a tiny pinch of salt and dash of vanilla... It was unbelieveable.. Next time i may throw it in the freezer for a bit to let it set up and develop the flavors..Thanks for a great, simple, soul satisfying recipe!!

WONDERFUL, just received my seeds yesterday, made this right away, then I made it with almond milk and put it in the frig and had it for breakfast.I think the almond milk gave it a more "creamier" flavor. I made it with stevia because I was out of agave, it was a little two sweet but still very good.This is going to be a regular treat. How much Chia is too much?

mmm...chocoholics unite! my sis is visiting me and is trying to model her diet after mine-completely raw. This sounds like the perfect thing for her, as she is always experimenting with anything involving chocolate. As am I. I'm sure it will be a great bonding experience...in a sisterly manner of course!

Hi, I haven't tried to recipe, but I wanted to let you know about 'flax eggs' which may produce the same type of gel that chia does. Agnes of "A Vegan Ice Cream Paradise" once posted a recipe for flax eggs that combined hot water and flax seeds in a blender. I used lukewarm water and flax meal and was able to produce the gel. Agnes says to wait 15 minutes--I waited about 30. I think the mixture can last in the fridge for a few weeks. The measurement I used was 2/3 cup water and 1/3 cup flax meal mixed well. I'm guessing it would be the same with whole seeds and water in the blender. I hope this can help those who can't get chia seeds (though I'm not sure it'll taste as good).

Angie....not to get technical or defensive, but cacao powder and cocoa powder are, in fact, two different products. Cacao powder can be made by grinding raw cacao nibs or beans into powder..poof done, cacao powder. COCOA powder is a diferent process. Raw Cocoa powder starts with cacao beans that are cold pressed into a paste called chocolate liquor.The oil is separated and what you have left is cacao butter and a cake of fiber. This cake is then milled into cocoa powder. I think it has a far more "chocolatey" taste than cacao powder and combines better into just about anything. At least this is my definitions of Cacao powder vrs. cocoa powder. It may just be we are taliking about the same thing in a different way. I get my raw cocoa powder from natutral Zing and it is a must have in our kitchen. One of my favorite things to do with it is just grind it up with cashews, a bit of coconut, and a splah of agave to taste.. An instant bite of heaven. By the way, the banana mango pudding has had two unsucessful attempts.. All three ingredients are somewhat "gloppy" and the combintion of all three was a good substitution for rubber glue. Tasted ok, but the texture was almost comical. I will be trying again with other flavors as i really love the pudding texture, and chia seeds are an awesome food and great for weight loss.. geespeen - raw cocoa powder IS raw cacao - the names are used interchangeably :) Banana mango?! Wow! That sounds amazing!

I never really liked tapioca, but this stuff is pretty good :) I love that it's so easy, and I think that the tiny crunch of the seeds makes it more palateable for me - I don't love slimy globs so much.

OK, tried this and indeed it made me feel GREAT. I think that ground chia would work pretty well. I might try blending next time just to see what happens . . .

Definitely not, only chia seeds will form the necessary gel. I don't think any other seeds will do this. Sorry!
