  • 1. Throw all ingredients in a high-speed blender and blend up 'til nice and smooth and well mixed. You can let the soup blend in the blender for a little extra time so that the heat of the blades and the friction actually warm up this delicious, creamy raw soup. Blend until very creamy and smooth.
  • 2. Transfer raw creamy carrot soup to a bowl.
  • 3. Garnish with whatever you like! I simply sprinkled my soup with pepper and a tiny carrot garnish. Eat immediately.

This recipe is super simple and requires only a blender to make.

It's also very quick to pull together if you have carrots in the fridge, as well as some cashews in the cupboard. And really, who doesn't have carrots lying somewhere in the fridge? They last for a long time and are quite inexpensive. And you should always keep some spare cashews around!

It usually takes about 2-3 carrots to make 1 cup of chopped carrots.

This raw carrot soup recipe makes a nice big bowl for one person. :)

looks delicious! I made something similar with pumpkin, ginger and some coconut milk.

you mentioned that you use a high speed blender...do you think it would also work with an immersion blender? my countertop blender just died and I am arguing with myself if an immersion blender isnt enough...

Immersion blender is totally not enough. You sound like a kitchen diva - you will need something! Doesn't have to be top of the line, but it'll be worth it :)

Would like to try this but a bit dubious about cold soup! Am going to try and do 30 days raw in January so guess I need to get used to it! Wondering if I could heat this up in my thermomix to 37°?

Hi Claire! I usually let my soups blend a little longer than normal, and to me they're not really cold, they're more like room temp or a bit warmer -- now, a cold soup straight out of the fridge, I couldn't do that!

Have not tried it yet, but it reminds me of my favorite soup in the Moosewood Cookbook . . . Some other things I may add which were in Moosewood are garlic and onion and with a sprinkle of Nutmeg and cinnamon. I will be trying it tomorrow. :)

i thought...carrot soup oh yuck, until i took a chance and made it...omg this is fantastic,so rich and smooth and delicious,i even shared with hubby who is not one to eat different things,he is a meat n potato person..he loved it..gonna try more soup recipes from this site..your awesome and thank you so very much for all your delicious recipes

Heat destroys enzymes. High speed blenders an juicers literally rip the enzymes apart, rendering far less nutrition available.
I would like to try it, but using a my Champion juicer - slow speed, no heat!!!

Do you think it would work with macadamia nuts? My stomach does not like cashews :(

Hi Becky, yes macadamia nuts or pine nuts would work fine instead of the cashews. I like to soak my macadamia nuts for at least 20 minutes and rinse them before using
