I don't make recipes with macadamia nuts very often because they are rather expensive, but this raw mayo is totally worth it.

It's light, fluffy, and subtly tangy. It's also very rich. Mmm!

My husband is a purist type, and he doesn't even like this raw mayonnaise recipe because it tastes "too much like mayo." But I love it for that very same reason!

I definitely recommend this mayonnaise recipe. It's a must-serve when making raw veggie burgers.

My blender is pretty crappy, and I was worried that it wouldn't blend the macadamia nuts, but they blended well.

I'll be serving this on veggie burgers, using it as a dip, a spread, etc.

My expectations of this recipe were pretty low because I have tried some recipes that have GREAT names but taste nothing like their names. For example, I recently made "seed cheese" and it tasted nothing like cheese. But behold the power of the raw mayo!

If you try this one, please let me know what you think. Let me know if I've over-hyped it. :)

I would like to try this specifically using the Mac Nuts, because of their fatty-acid profile. My question is, why the Italian seasonings? I have loved the taste of Store-bought mayo my whole life, but don't think it had Italian seasonings. Also, do you think I could substitute lemon juice for apple cider vinegar, and maybe add a little turmeric? Thanks!

I think I was going through my Italian seasoning phase when I made Better Than Mayo :) You might try the substitutions, noting that turmeric will give it a yellow colour. You may want to try the recipe as is, except use macadamias instead of cashews...it's really yummy.

Just made the mayo but substituted raw cashews because that is what I had on hand. Delicious! Tastes like mayo. I made it to use in my potato salad for my Greek salad. Thanks!

I made the version with just the cashews and it was good! It really tasted like miracle whip. I think on a sandwich if you didn't know, you probably wouldn't be any wiser!

We have a nutribullet. It makes excellent greens/fruit/boost smoothies. It homogenizes VERY well. It's a true nutrition extractor! I've used it to make the Alfredo sauce, a raw lasagna, and a cheesecake. It did an excellent job with all of those. It's capacity is limited compared to a vitamix or blendtec, etc., so if I could afford a vitamix from Costco for $375 I'd get one in addition. The $99 nutribullet is a good choice for starting out with green smoothies and small projects especially if your budget is

Hi Charlie,

Great tips here about blenders. I have a Vitamix myself and I recommend them, but I agree that they are not in everyone's budget -- especially when just starting out.

Glad you enjoyed my Better Than Mayo recipe from Uncooking With RawRose. A few years ago I had trouble finding good macadamia nuts, and also wanted to reduce the amount of olive oil. Here's my revised recipe which is really great ...if I do say so myself :)
Blend:
1 1/2 cups raw cashews
3/4 cup water
1 tablespoon olive oil
2 tablespoons apple cider vinegar
1 1/2 teaspoons Italian spices
1/2 teaspoon sea salt
dash of cayenne

Just made this with half and half cashews and macs......plus the juice of half a lemon and more water. It's delicious and I don't think my husband even noticed it wasn't real mayo!
The rest is now dehydrating into what I reckon will be some yummy crackers!

They are very rich and creamy and will be superb crumbled over a salad. A little goes a long way as they are so rich and I felt they even have a cheesey flavour!
Left them out on the side when they came out of dehydrator and in a couple of hours they were moist again with our NZ humidity so are back in the warmth to dry out again!

I have a Nutri Bullet and wonder how it compares to the Vitmix and Blentec. I've made green smoothies without any issues and it's pretty smooth. Wonder if this recipes would be just as good made on the Nutri Bullet?? Has anyone tried?

I LOVE this recipe. i used only cashew nuts and it is delicious. My only question is; how long does this keep, in the refrigerator? I am single and it made about 2 cups! That's a lot for one person!

Hi Sharai, It is a lot for one person, I agree! It keeps in the fridge tightly sealed for about 4 days. If you have a dehydrator you can dehydrate as crackers, or leftovers can be frozen. For example, you might want to split the finished product in half - freeze half of it and use the rest in the fridge.

I don't have vitamix (but its on my list!) or dehydrator yet. What cheap dehydrator do you recommend? I see most of your receipes require it. So far I've managed without these but I think I'm going to need these soon. Could you pls recommend?

Best dehydrator is 9-tray excalibur, hands down. But... it is expensive! http://tinyurl.com/ah6o3qt

You can also get a Vegikiln - they are cheaper, white, not as "reputable" but they get the job done: http://tinyurl.com/avb59e3

Overall, you should get a 8-to-10-tray, and do not get a round dehydrator.
