Coconut meat from normal coconut

I have a regular old coconut I cracked open this morning for it's water. I now have the remaining coconut, and I don't know what to do with its meat! All the recipes I've ever seen calling for coconut want meat from a young thai coconut.

What should I use the rest of my coconut for?

  • I want to do something special with it! I also don't enjoy eating it plain.

  • It doesn't taste like a whole lot, so I imagine you could shred it and throw in some spices to use as a "rice"? It would probably marinate well and could be used in sweet or savory dishes. Maybe shred it and use it as a filler for brownies with a little cacao and dates? It's great shredded as a pie crust with a little lemon or orange zest, cashews, dates, and sea salt. Filling of your choice (fresh fruit...yum). There are options...

    meat from 1 coconut

    water (as needed)

    stevia (or sugar, or agave. really what you want)

    dates (optional)

    Blend meat with water until it becomes smooth (to a pudding-like consistency) and add sweetener of choice. Chill in the fridge until it's cold.

    I like to add berries, and it's like a DELISH parfait or something. you could also use coconut water instead of regular water, if you have any. maybe even a juice!
