dehydrated coconut flakes are orange

Does anybody know why half of my coconut flakes are discolored? I put them in the dehydrator last night after putting them through the blank (forgot the name... blank screen? ) in the Green Star juicer. Are the coconuts bad? I used 2 of them. One of them was slightly off, but not too bad to use (didn't taste bad).

I planned on making coconut butter and oil from them after drying. Can I still use them?
