Drying out nutrients?

I just discovered in looking at nutritiondata.com (thanks roadrunner) that raw cranberries contain 24% vitamin-C, while the dried cranberries contain 0%... likewise, raw grapes contain 27% (per cup) but raisins only contain 6% (also per cup.)

I have been buying a lot of dried fruits ( for better storage) thinking it was only the waters I was missing, but it would appear I am losing some valuable nutrients too. I know in raw food preparation, a dehydrator is used a lot too.

Does drying food sap nutrients-- including use of a food dehydrator?
