Ingredients
1/2 cucumber, cut into 3 inch pieces
1 sheet of untoasted nori
1-2 tbs favorite nut pate (optional)
Recipe Directions
Cut the sheet of nori in half. Spiralize the pieces of cucumber into noodles. (if you dont have a spiralizer, you can probably just shred it very thin). If using a pate, spread about 1 tbs on each sheet of nori. top with spiralized cucumber, roll up and enjoy! It is best to eat them quickly because the nori will get soggy!

This is a good idea but I will probably use avocado instead of the nut pate and dip in namashoyu with a dash of agave nectar. Okay now I'm hungry!
