  • Vitamins, especially water-soluble, are affected by cooking. Fats and proteins are affected by cooking.
  • No, cooking will not lessen the harm of the pesticides, unfortunately. well, some might be broken down somewhat with heat. It depends on the chemical involved and the heat.

  • Before I forget: they say that most of the info on their lists take into consideration washing and/or peeling. Taht means that the apples(for example) were washed, so you see the pesticide inside the fruit itself, not the outside.
