I have a recipe I’ve been meaning to try . . .
Ginger Un-Steamed Rice
1 1/2-2C cauliflower
1 1/2C parsnip
2T almond butter or tahini
1T grated fresh ginger
1 squeeze lemon
I wonder if you could make this with just parsnip, I’m out of cauliflower? Thoughts.
The recipe is sushi “rice” in the recipe database. The comments say that parsnips work. I haven’t tried it, but I plan to.

i made mine with parsnip and a few teaspoons of pine nuts. it was actually very nice, but a tad bitter, so i think that it would be even better mixed with cauliflower.
I made this, using jicama instead of parsnips. It worked very well inside my “sushi” rolls!
