I use them as a replacement for green onions. They taste essentially the same to me.
I tried raw leeks once... and only once. They were too tough, bitter, and spicy in my recipe. I much prefer green onions.
I use them in salads and raw soups, yummy! :)
I would also do a soup. Maybe with fresh thyme, soaked cashews or walnuts to make it creamy, a little lemon juice, even some celery or cucumber.
I'd blend it all up, grind a little pepper on top, and then stir in a chiffonade of spinach or maybe chard.
