Have you tried the Cheese with Spring Onions?

It is my favourite and comes out perfect for me every time. Maybe try adding less liquid?
This person actually uses probiotics to culture her raw cheese....

Yes! Carmella from the Sunny Raw Kitchen has some wonderful raw cheese recipes using probiotics. I made one of her recipes this winter using rejuvelac and it turned out brilliant! Both my husband and I were amazed at how good they turned out!
This weekend we also made a cashew cheese using just probiotic capsules w/o the rejuvelac and it workd very well (just as good as the rejuvelac cheese). I used Carmella's garlic and basil recipe to flavor the cheese and it was amazing. I used it on my rustic pizza crust with my own pesto recipe. YUM!!!!
Here are the links in case anyone wants more details. Carmella's link is also excellent and I highly recommend checking her blog posting above which eecho posted.
Here's my most recent probiotic cheese post:

Here's the one back in March with just rejuvelac (page down past the St patty's day raw food and the mint chip swirl cheesecake)

oh yes and for a quick simple cheese w/o probiotics, try Zoe's cheese with spring onions! I second that one!
Hi Guitarnerd. I have a really nice, really easy (no probiotic culturing needed!) Pumpkin Seed Cheese recipe on my blog - maybe I should post it here, too....It always comes out amazing and never runny. Zoe's Cheese with Spring Onions was my inspiration!
This recipe is for a garlic scape version but you can use any green herb - dill, parsley, cilantro - so it comes out different every time. http://eat2evolve.blogspot.com/2008/06/food-play-pumpkin-seed-cheese.html
