Personally I use http://www.markv.nl/rawvegan/ as a calculator. I do mostly because I made it myself so I know exactly what goes on and it does exactly what I want. Nutridiary.com should work fine too though, and it's probably more professional :-P
Also, from my own experience, if you're starving you should eat more; I've found it hard to over-eat. Though I should mention I'm on a low-fat version of the raw diet.
