I often try different recipes for dehydrated foods (not referring specifically to recipes in this forum, but generally) and have noticed they seldom contain expiration dates or storage instructions, so I'm often unsure how long the food will last or how to store it.
I made a "corn chip" recipe and I guess I didn't eat all of them fast enough: the chips became soft and were no longer edible. Is there a way to prevent this? or once it has happened, is there a way to make them more crunchy again? Can dehydrated foods that have lost their crunch be returned to the dehydrator again and "crisped up" - or will that not work?
A week ago I made a "raw bread" recipe made from seeds and berries. It was fairly soft and moist. I just opened the container where I had stored it and found it was covered with white fuzzy mold. Obviously it should have been kept in the fridge! As a rule of thumb should dehydrated foods always be kept in the fridge, does this preserve them better? or is there a way to know which ones need cold storage?
