If cooking food kills enzymes, does freezing kill enzymes and can I keep produce in the refridgerator without killing enzymes?

    Freezer gets some but not all. When you are going to preserve veggies by freezing, you must blanch first to destroy the enzymes that cause the food to deteriorate. I have never frozen much fruit, but because of the sugar, I don’t think it is blanched. It can be frozen whole and without any processing.
    The refrigerator slows deterioration. Limp, lifeless produce = deteriorating nutrition.
