drying soaked nuts?

I am starting to understand why we should soak the nuts… but if we dry them afterwards in a dehydrator won’t that change it and make it less healthy? I mean if I soak a nut and trick it into thinking that it is going to grow into something but than dry it won’t it go back to thinking it isn’t going to grow into anything and go back into hibernation or something? Excuse my poor explanation here…. but I don’t really get it. What’s the deal with the nuts? :-)

    It isn’t neccessary to dehydrate them. Some recipes call for dehydrated nuts for the texture, but leaving them wet makes them blend easier. If you dehydrate them at a low temperature, the enzymes are still alive.

  • Drying sprouted nuts and seeds ahead of time makes them really great to have when away from home. We often rehydrate them with a little water or fresh juice a few hours before eating them.
