Chinese Vermicelli or bean thread...

I was hoping to find kelp noodles at my asian store (they didn’t have them) but I came across Chinese vermicelli. I read somewhere that they are noodles made from mung beans that are dried. Could this be considered raw? I bought some and upon closer inspection the ingredients listed: green beans, pea, corn starch and water. I thought I could try soaking them instead of cooking them… what do you guys think? It probably isn’t raw? What about the corn starch? Highly processed?

  • And another thing… carbonated water? Is this bad for us? Since going raw I haven’t had any or wanted any… but I was just thinking about it and wondering if it is good or bad to drink. Any ideas?

  • Maybe if you could make your own noodles out of dried mung bean sprouts. That would be so cool.
