Oil is just the oil. Coconut butter (such as made by Artisana) is really thick and creamy (like butter). It’s made from the coconut meat so it’s alot more flavorful as well. The butter is less versatile than the oil, in my opinion of course. The oil can be used in almost anything where as the butter has such a strong coconut essence that it limits you a bit. I think the best use for the butter is in desserts because it adds a nice flavor and thickness to pies/puddings/fudge and what not. But I suppose the butter could also be made into a nice coconut curry sauce sort of thing. Anyhow, I’ve also noticed that a lot of raw chefs refer to the coconut oil as coconut butter. There is a big difference though! Hope that helps you out a bit :-)
