Raw carrot pudding???

I made cooked carrot pudding once and although it did not turn out the best, I think it could. It had too much nutmeg, not enough honey and was not cooked enough therefore, it was not soft enough. It was pureed in the food processor though. Sooooo, can something like this be made to taste good, RAW? I think carrots are MUCH sweeter raw.

  • There is a sweet potato parfait recipe that sounds very similar to what your talking about. I have made it several times and enjoy it very much. Though it is a bit starchy. Someone suggested pumpkin as a substitute. Unfortunately pumpkin is not in season anymore. Carrots would be an awesome substitute! For the carrots to blend well, you can shred them with a peeler.
