Famous Onion Bread Substitutes

I love Matt Amsdem’s famous onion bread so much, it’s really the only bread I’ve made that I like. So my question is: has anyone tried to use it as a base to make a variation or some other kind of bread. I’m thinking zuccini instead of onion or carrot maybe?

i wuse carrot and onion all the time in my recipe , and ive used a mixture of root veggie pulp too, the brown bread recipe by poemmom is fab! I added some oat groats and pumpernickle to my second batch and it was great!!!
