What to do with celery root (celeriac)?

I just received celery root in my CSA basket and have no idea what to do with it raw. I was thinking making kraut with it or eating with some kimchi. Any other suggestions?

Grate it and put it over salad with some chopped cucumbers.

I always wanted to know too. How does it taste like? Celery? How long does it keep for? How do you know when its…ripe? You cut the peel off I imagine right?

I like trying new things. What can I say, I’m all for variety!
