dehydrator - do I really need it?

After salivating over some of these recipes, I am coming to the conclusion that I need a food dehydrator. I am concerned is the teflon baking sheets, though. Is there a brand that uses something other than teflon? Or can I use something else (parchment paper or similar)?

Also, is it possible to just use the oven on the lowest temperature setting, rather than buying the dehydrator?
