1. No need to rinse, you can eat the gel.
2. I would say about 3 days (fresh is best)
3. You can use chia instead of flax seeds in most dehydrator recipes that use flax as a way to bind the ingredients together.

thanks again!
there’s a chia pudding recipe on this site i’ve wanted to try but don’t have the seeds yet.
i had a “rice pudding” (more like tapioca, but who cares?) with cardammon at pure food and wine made with chia seeds… oh my lord! divine!
Chia seeds will keep in gel form for up to 2 weeks! Definitely keep the gel intact, it provides many benefits!
thanks kevin! luckily i haven’t tossed them yet!!
To answer your question about chia in smoothies, you’ll want to figure on a ratio of about one part chia to 9 parts liquid. In a 16 oz drink, you would want about 2-3 tablespoons. Remember to grind them up to get the full benefits of the seeds!
You need to grind the chia seeds before adding liquid?
You don’t “need” to grind them but just like with flax you will reap more benefits!
Then grind I will – thanks Kevin. :)
